Impossible Ham + Cheese Quiche

INGREDIENTS

  • 1 cup diced cooked ham

  • 1 cup grated cheddar or Swiss cheese

  • 1/3 cup chopped green onion

  • 1 cup Bisquick baking mix

  • 4 eggs

  • 2 cups milk

  • 1 Tbsp dried parsley (optional)

  • salt and pepper to taste

INSTRUCTIONS

  • Heat oven to 400F.

  • Grease a 9-in pie plate or use no stick spray

  • Sprinkle ham, cheese, and green onion evenly in pie plate

  • Sprinkle parsley if using

  • In a medium sized bowl, mix eggs and milk

  • Add Bisquick and blend until mixture is smooth

  • Pour liquid mixture evenly over ingredients in pie plate

  • Place in preheated oven for 40-45 minutes, or until a knife inserted in centre comes out clean

  • Let the pie sit for 5 minutes before cutting; otherwise it will not hold together when sliced

 

TIPS

  • This recipe uses ham and cheese but you can substitute ingredients to make use of any leftover meats and vegetables 

  • It can be vegetarian if you wish. Just add any vegetables:  e.g. chopped sweet peppers and sliced mushrooms

  • Use about a cupful of each vegetable

  • Milk can be skim, or 1% or 2% or whole, or use 1 cup evaporated milk (not condensed) and 1 cup water
